Garlic and Mushroom Shrimps - Lean and Green

These shrimps can be prepared in a skillet or for an extra fast version in the microwave. This is a great meal to whip out when you need lean and green in a hurry.

Ingredients

  • 7oz small shrimps
  • ½ cup mushrooms
  • 1 clove garlic, finely chopped
  • 1 tsp olive oil
  • ½ tsp lemon juice
  • ½ tbsp chopped parsley

Mircrowave Instructions

Clean mushrooms, leaving them whole but removing the stalks.

Place mushrooms, garlic, salt, pepper, lemon juice and oil in a microwave proof dish with a lid. Cook for 2 minutes on high (700-800 watts).

Add the shrimps and cook for a further 1 minute on high, stirring half way.

Check that shrimps are cooked and cook for another 30 seconds on high only if required.

Frying Instructions

Clean mushrooms, leaving them whole but removing the stalks.

Heat the oil in the skillet. Add mushrooms, garlic, salt, pepper and lemon juice. Cook for 2 minutes.

Add the shrimps and cook for a just under 1 minute, when the shimps begin to change color.

Check that shrimps are cooked and cook for another 30 seconds if required.
